A layered hole pattern
The IKAPE Clockwork is a high extraction basket with 1109 laser-cut holes. IKAPE compares its base to a running tourbillon more than to a matrix basket, and states that the layered distribution of holes creates different extraction conditions, which gives a layered coffee flavour.
The holes are precision laser cut, and IKAPE states they are even in shape and size, for an even spread of water through the coffee.
Choose the right size
- 54 mm, 18 g: Sage / Breville machines with 54 mm baskets, including Barista Express, Barista Pro, Barista Touch and Bambino Plus. IKAPE makes only the 18 g dose in this diameter, 25.2 mm high in IKAPE's photo.54 mm
- 58 mm, 18, 20 or 22 g: IKAPE lists E61 machines such as La Marzocco, Isomac, ECM, Expobar, Lelit, Rocket, San Remo, Rancilio and Magister, and other 58 mm machines: Gaggia, Bezzera and Maxims. In IKAPE's photos the 20 g basket is 26 mm high and the 22 g basket 28 mm.58 mm
Choose the basket for the dose you weigh out.
How to use it
- Take the basket that came with the machine out of the portafilter and fit this one.
- Dose to the weight the basket is made for, then break up the clumps and level the bed.
- Tamp level and start the shot.
- Adjust the grind after the first shot, since a new basket seldom runs exactly like the old one.
Materials and care
The basket is food-grade stainless steel, and IKAPE states it lasts many years, even under the pressure of the machine. It comes in silver or gold.
Knock the puck out after each shot and rinse the basket under hot water. Soak it in a coffee cleaner when the base darkens, and hold it up to the light afterwards: blocked holes show up as dark points.
